- sugar - 7.25 kg;
- honey - 0.75 g.
- All ingredients are mixed.
- A container for a week is placed in such temperature conditions - +35 ... + 36 ° С.
- Stir everything daily 3 times.
- The mixture is insisted and drained.
Important! The end of the inversion process is determined by the presence on the surface of the foam and single crystals of undissolved sugar.
With citric acid
The addition of acids to sugar syrup is considered the most cost-effective method of preparation. However, this food contains only carbohydrates.
- water - 6 l;
- sugar - 7 kg;
- citric acid - 14 g.
- All of the above is mixed in a container, put on a stove.
- Stirring, bring to a boil.
- Stand on fire for about an hour.
With the addition of industrial invertase
- water - 5 l;
- sugar - 5 kg;
- invertase - 2 g.
Important! Boil invert syrup is contraindicated, as it will become toxic.
- Prepare regular syrup. Water and sugar are mixed in a container, boiled until the latter is completely dissolved.
- Invertase is added to the liquid cooled to +40 ... + 50 ° С.
- All is well kneaded and left for 2 days at a temperature of +20 ... + 50 ° C.
With the addition of lactic acid

- sugar - 5.5 kg;
- lactic acid - 2 g.

Using enzymes of lower organisms
